This extra virgin organic olive oil is achieved through first cold extraction, has a very low acidity less than 0.2 percent and a good intensity of bitter and spicy, supporting the "character Sierra Mágina". For this reason, it is ideal for both raw cooking: toast, salads, pastas, rice, fried, stews, etc.

Cultivation of Extra Virgin Olive Oil

Extra Virgin Olive Oil of the Cornicabra variety is native to the Region of the Montes de Toledo and is grown between this province, Ciudad Real and the Community of Madrid. It is the second variety in cultivated area, after picual, and the third in terms of production. The EVOO extracted from this olive is the only one certified by the Montes de Toledo Protected Designation of Origin and is also authorized by those of Campo de Calatrava and Campo de Montiel

Five generations that keep alive the respect of our centenary olive trees with their own genetics. These trees offered the world an unrivalled fruit, with taste properties that satisfy those who know how to appreciate oil with a strong personality.

This strain has a high content of oleic acid, polyphenols and antioxidants. It is very stable and has great resistance to oxidation, which, together with its high vitamin contribution, makes it an indispensable product for the Mediterranean diet.

Organoleptic features

An extra virgin organic oil in terms of organoleptic characteristics, presents a slightly greenish yellow color, fluid and velvety texture, with an intense green fruity with herbaceous nuances and light notes of banana, gram, artichoke or green almond . Each harvest is unique, but with an intact essence: that bitter taste with intense fruity olives and a slight spicy touch.
